Description

These caramelized beets are a vibrant and flavorful side dish, perfect for pairing with roasted meats and garlic mashed potatoes.


Ingredients

  • 3 large beets
  • 1 large purple onion
  • 2-3 garlic cloves
  • 2 Tbsp olive oil
  • 1 Tbsp brown sugar
  • 1 tsp sea salt
  • Optional: Blue cheese crumbles for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel the beets and cut them into large chunks.
  3. Peel the onion and chop it into thin slices.
  4. Mince the garlic cloves.
  5. In a glass baking dish, toss the beets, onions, and garlic with the olive oil, brown sugar, and sea salt until well coated.
  6. Bake in the preheated oven for about 1 hour, stirring occasionally, until the beets are tender and caramelized.
  7. Optional: Sprinkle with blue cheese crumbles before serving for an added tangy flavor.
