Description

These sticky buns are a weekend treat. Sweet caramel, crunchy bacon, and fluffy dough make a perfect brunch.


Ingredients

  • 1 cups (237 ml) warm water
  • 0.75 cups (178 ml) buttermilk
  • 0.5 cups (118 ml) granulated sugar
  • 5 tbsp butter
  • 3 tbsp dry active yeast
  • 0.5 tbsp table salt
  • 2 large eggs
  • 5.5 cups (1306 ml) all-purpose flour
  • ? cups (?) butter
  • 1 cups (237 ml) brown sugar
  • 0.25 cups (59 ml) granulated sugar
  • 1 tsp cinnamon
  • Melted Butter
  • Salt

Instructions

  1. In a large mixer bowl, combine water, buttermilk, sugar, melted butter, and yeast; stir and let sit for approximately 15 minutes until the yeast is puffed and frothy.
  2. Add in eggs, salt, and flour; mix slowly using a dough hook until the flour is incorporated.
  3. Mix/knead for 10 minutes.
  4. Once mixed, let the dough rest for 10 minutes while you prepare the filling and preheat the oven.
  5. Prepare the filling by combining melted butter, brown sugar, sugar, and cinnamon in a small bowl; mix with a fork.
  6. Prepare the topping by melting brown sugar, butter, and honey in a saucepan.
  7. Remove from heat and add pecans and bacon.
  8. Preheat oven to 375°F (190°C) and line a 9×13 inch pan with parchment paper.
  9. Roll the dough out on a lightly floured surface into a flat, even layer (approximately 12×15 inches).
  10. Sprinkle the filling mixture on top.
  11. Roll tightly on the long side and cut into 12 large rolls.
  12. Place the rolls in the prepared pan on top of the topping and bake for 20-25 minutes.
  13. Add melted butter, caramel sauce, and more bacon to the topping when serving, if desired.

Notes

  • For a richer caramel, use dark brown sugar instead of light brown sugar.
  • To make these ahead, assemble the buns up to the baking stage and refrigerate overnight. Add 5-10 minutes to the baking time.
  • Crispy bacon is key! Ensure the bacon is cooked until crisp before adding it to the topping.
