Watermelon Lime Popsicles

These utterly refreshing, 2-ingredient popsicles will ward off the summer heat any time of day.

Popsicles like this one should be served for breakfast.  Hear me out on this one.

Every day of the year, I step out of my apartment, into the blazing humidity of a Bangkok morning, and instantly wish I had something icy cold to ward off the heat.

Like a popsicle. Made entirely of fresh fruit.

Fruit popsicles are an irrefutable classic for kids. Since early memories of pouring apple juice into ice cube trays and deeming it dessert, I have never questioned their status as a delightful post-dinner treat. Until today.

Today, I realized that my adult self can take sweet, delicious, pureed fruit, freeze it into delightful shapes, and eat it first thing in the morning.  The adult in me knows it’s good for me, but the kid in me still thinks it’s dessert. All of me is much happier walking out the door on a hot morning with one of these in my hand.

Description

These refreshing summer popsicles of bright watermelon and lime are easy to make, but even easier to enjoy any time of day!


Ingredients

Scale
  • 6 cups of 1-inch watermelon cubes, seeds and rind removed
  • 2 teaspoons fresh-squeezed lime juice

Instructions

  1. In a blender or food processor, puree the watermelon and lime until very smooth. Pour into popsicle molds or ice cube trays and freeze until set, about 4 hours.

Notes

If using ice cube trays to freeze, consider dropping a few of these watermelon ice cubes in a glass of sparkling water with cucumber or lime slices for a beautiful and refreshing summer drink.
