The Pastry Chefs Behind The Conrad Dublin’s Tea Time

Named after the main character in Gulliver’s Travels, Lemuel’s Bar and Lounge will transport you around the world without ever leaving your seat.  And orchestrating this journey is Pastry Chef Brizaida Hernandez and Guest Michelin Star Pastry Chef Eddie Benghanem who have created the menu to enhance this wondrous experience.

With numerous degrees in Culinary Arts from the Dublin Institute of Technology and the Ministry of Education in Venezuela,  Chef Hernandez has been cooking and baking professionally for over sixteen years.  Her career spans from working at a variety of hotels and restaurants including Shanahan’s on the Green and the Four Seasons Hotel Dublin/Intercontinental Hotel Group and held the position of Cookery Tutor at the Institute of Adult Education in Caracas, Venezuela.

Proudly, she reigns as the Pastry Chef at the Conrad Dublin.  At the Conrad Dublin, Chef Hernandez designs a variety of desserts for the Conrad’s Coburg, a brasserie and Lemuel’s Bar and Lounge with fine food and of course, the Conrad Dublin’s elegant afternoon tea

Collaborating with Chef Hernandez on Conrad Dublin’s Tea Time menu was Guest Chef Michelin Star Pastry Chef Eddie Benghanem.  Chef Benghanem started creating pastries at the age of six when he made a strawberry tart much to the praise of his restauranteur parents. Their restaurant became the future Chef’s park to play in as he learned by taking advantage of what his surroundings were teaching him.  From creating desserts in the Parisian Military to working at Michelin Star Gordon Ramsay au Trianon and La Veranda by Gordon Ramsay the critically acclaimed Benghanem is a ravenous creator who loves discovering new tricks of the trade and ways not to bake with sugar, a paradox to say the least.

Together, both Chefs created a Tea Time menu like no other.   Only at the Conrad Dublin will you find elegant savoury and sweet eats with a twist made with all local ingredients that will make this tea time memorable.   Choose from Traditional Irish Tea Cakes with Whiskey Butter to Coconut and Mango Panna Cotta.  Indulge in a Cashel Blue Cheese Tart with Fresh Figs and Candied Walnuts or perhaps a Goatsbridge Trout Mousse or Rare Roast Hereford Beef with Horseradish.   For Drinks have a glass of champagne and explore with the world by selecting one of 18 varieties of teas served at Conrad Dublin.  Be indulgent with an Early Grey Tea from Sri Lanka or a Darjeeling 2nd Flush from India.  Be invigorated with a Yellow Gold brew from China or soothe your spirit with a Jasmine Silver Needle Tea from Fujian.  Just sit back and relax and let the Conrad Dublin be your guide on this unforgettable “Tea Time” adventure.

I interned and worked for a bit in the Test Kitchen of Rachael Ray's Magazine "Everyday with Rachael Ray" but missed meeting her by 15 minutes. Currently, I'm the Marketing Director for Town Sports because after eating all of that pastry and working in a test kitchen, I needed a free gym membership.
