Simple Edamame and Shrimp Salad

Ever since making a mental note to myself to eat at least one salad a week; I’ve been thinking of ways to make salads more fun and of course pretty on the eyes.

Today, I’m sharing an easy salad recipe that I made this week. If you are a shrimp lover, listen up! You won’t be disappointed.

Simple Edamame and Shrimp Salad

This salad consists of only three ingredients: lettuce, edamame, and shrimp. When it comes to this salad, less is definitely more.

Free feel to substitute cilantro with any herbs of choice. I would do basil, mint, or thyme.

I think any dressing would do but I tossed mine with a slightly creamy caesar salad dressing. Hope you’ll give this a try.

Description

A simple salad with bold colors is a beautiful definition of “less is more”. Fresh flavors of shrimp, herbs, and edamame make for a filling green bowl.


Ingredients

Scale
  • 6 large shrimp
  • Olive oil, for drizzling
  • Salt and pepper, to taste
  • Paprika, to taste
  • 1 Tablespoon cilantro, chopped (may also use basil, mint, or thyme)
  • 1/2 cup shelled edamame
  • Enough to fill desired bowl, Lettuce of choice, cut into bite-sized peices (I used romaine)

Instructions

Baked Shrimp

  1. Preheat oven to 300F.
  2. Drizzle peeled shrimp with olive oil and season with salt, pepper, paprika, and cilantro.

Assembly

  1. Fill bowl with lettuce.
  2. Top with shrimp, edamame, and season to taste with salt and pepper.
  3. Dress with a drizzle of dressing or oils an vinegars of choice.
