Here’s an easy gluten-free recipe made with GoVeggie! Rice Cheese to make that’s perfect for your summer lunch!

Ingredients
  • • 1 pint fresh strawberries, thinly sliced
  • • 6 cups fresh mixed salad greens
  • • 2 tsp. freshly squeezed lemon juice
  • • 1 Tbsp. balsamic vinegar
  • • 2 tsp. honey
  • • 2 Tbsp. olive oil
  • • ¼ tsp. sea salt
  • • ¼ tsp. freshly ground pepper
  • • 1 block Go Veggie! Mozzarella Rice Cheese, sliced into ½ inch strips
  • • ¼ cup pumpkin seeds
Instructions
  1. In a large bowl, combine all ingredients; gently toss to combine.
  2. Transfer to a serving bowl.
  3. Serve immediately.
