These Potato Cookies will have you waiting for them to be just cool enough that you don’t burn your tongue and then you’ll be biting into one.

These oat cookies are so flavorful and filled with natural protein which makes this treat a pretty healthy snacking choice too. They’re chock full of sunflower seeds, cranberries and smooth almond butter spiced with cinnamon, nutmeg and more. They have no refined sugar and are only sweetened with pure maple syrup.

Then there’s the secret ingredients which I’m sure you can guess by the name of these cookies. Yup! Potatoes! Seems a bit strange, I’m sure but these Potato Protein Cookies will fool anyone. You’d never in a million years guess there are nutritious, delicious potatoes in these cookies.

I love potatoes and thinking of new, creative ways to use them is so fun! Potatoes add their own nutrition boost to these already healthy cookies because potatoes are an excellent source of vitamin C, a good source of potassium (more than a banana!), a good source of vitamin B6 and only 110 calories per serving! Description

Made with almond butter, sunflower seeds, warm spices and cranberries, these potato cookies taste good enough to be dessert, but are protein-packed and fit for breakfast or a snack.


Ingredients

Scale
  • 1 1/2 cup cooked (mashed Russet potato)
  • 1 cup almond butter
  • 2 eggs
  • 1 1/2 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/8 teaspoon cloves
  • 1/4 cup pure maple syrup
  • 1/2 cup sunflower seeds
  • 1/2 cup dried cranberries
  • 1/2 cup oat flour
  • 2 teaspoons baking soda

Instructions

  1. Preheat oven to 375°F. Line two baking sheets with parchment paper. Set aside.
  2. Combine mashed potatoes, almond butter and eggs in a large bowl. Mix well.
  3. Add vanilla, cinnamon, nutmeg, allspice, cloves maple syrup, sunflower seeds and dried cranberries. Stir to combine.
  4. Add oat flour and baking soda. Stir once more.
  5. Scoop onto prepared baking sheets, making 24 cookies. Bake at 375°F for 10-12 minutes.

Notes

Feel free to use any nutritious, delicious mashed potatoes. Also any nut butter such as peanut butter, cashew butter or even sunflower seed butter can be used in this recipe.
