One of the best things about summer is GRILLING. No need to get the kitchen all toasty just head outside to the grill and start cooking these Steak Tacos with Cucumber and Corn Salsa.

My family is in love with skirt steak and they could eat it seven days a week. Add a handful of smoky spices for the rub and they love it even more. I used cumin, cinnamon, chili powder, and garlic. So much flavor!

Grilled skirt steak tacos taste delicious with all sorts of fresh salsas. Summer seasonal produce at its best. I made a super fresh and simple cucumber and grilled corn salsa. Add some jalapeños, red onion, cilantro and lime and you are good to go. This is also a great topper for fresh fish or grilled chicken.

We love using skirt steak for our tacos because it’s full of flavor. Grilling it takes only a short time because it’s so thin so be sure to watch it carefully. Always slice it against the grain to ensure it’s tender. It works great as leftovers and my kids ate this the next night in their quesadillas.

A summer meal wouldn’t be complete without the perfect glass of wine. I am so happy to have found a red wine I enjoy as much as white. I am traditionally a white wine drinker and find some reds to be a bit too bold for me.

I love this Côte de Brouilly, which is one of the 10 Beaujolais Crus! It is a red wine that appeals to white wine drinkers like me. With aromas of fresh grapes and iris, it’s still delicate and perfect for summer.

I like to serve it at room temperature or with a slight chill. It’s perfect for summer parties on the patio or nights by the fire with s’mores. It’s versatile enough to be served with beef, chicken, pork or fish. Trust me, it’s a huge summer win!

Ingredients

Scale
  • 1 skirt steak
  • 1 tbsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • 1 tsp cumin
  • 1/4 tsp salt
  • 1/2 English cucumber (diced)
  • 1 ear of corn (grilled)
  • 1 lime (juiced)
  • 1/4 red onion (diced)
  • 1/4 jalapeño (diced)
  • salt to taste
  • 6 corn tortillas
  • 1 avocado (optional)
  • 1 tbsp cilantro

Instructions

  1. Mix together all spices in a small bowl and rub all over the skirt steak. Preheat grill to medium high.
  2. Cook skirt steak for 3-5 minutes on each side. Let rest under foil for ten minutes.
  3. While steak is cooking put one ear of corn on the grill. Rotate frequently until you get some char on each side.
  4. Make salsa by tossing together all cucumber, corn, jalapeño and red onion. Squeeze the juice of one lime on the salsa and add salt to taste.
  5. Slice steak thinly against the grain and serve tacos. Add cilantro, avocados and queso fresco for toppings.
