Crispy Gluten-Free Apple Crisp

This is the perfect recipe for a gluten-free Thanksgiving. Since I’m gluten-free, I used KIND Healthy Grains Clusters to get that extra crunch. Plus, they’re made with 100% whole grains so you’re getting some added health benefits from including these in your recipe. You can feel good about serving this treat to your family for Thanksgiving dessert and leftovers in your oatmeal the next day, too!

Description

This is the perfect recipe for a gluten-free Thanksgiving and it is delicious stirred into your oatmeal the next day, too.


Ingredients

Scale
  • ¼ cup pure maple syrup
  • 1 ½ tablespoons fresh lemon juice
  • 1 tablespoon arrowroot powder
  • 2 teaspoon ground cinnamon
  • Pinch sea salt
  • 6 large chopped apples
  • ½ cup almond flour
  • 1 ½ tsp. coconut flour
  • 1 cup chopped raw walnut halves
  • 1 cup KIND Healthy Grains Clusters, or other granola
  • 2 tablespoons coconut oil, plus more for greasing dish.
  • 3 tablespoons pure maple syrup
  • Pinch sea salt
  • Fresh lemon zest
  • ½ tablespoons coconut flakes

Instructions

  1. Preheat the oven to 350°F.
  2. Prepare an 8×8 dish with coconut oil; set aside.
  3. Mix the maple syrup, lemon juice, arrowroot powder, cinnamon, and sea salt in a large bowl.
  4. Place apples and maple syrup in the baking dish and toss to coat. Add almond flour, coconut flour, walnuts, granola clusters, coconut oil, maple syrup and sea salt; toss with apples.
  5. Bake for 45 minutes or until golden brown and bubbling.
  6. Remove from oven; set aside to cool for 20 minutes before serving. Garnish with fresh lemon zest and coconut flakes.
