Coconut Milk and Honey Pops

A lovely looking and healthy frozen coconut summer treat without added sugar.

Even though it’s late summer already, the high temperatures promise to melt everyone and everything here in the tropics (I live in Puerto Rico). Every year is the same, I’m sure you can imagine. Humidity in the air, lots of rain, lizards, never ending heat and sweat, coconuts falling in your head at the beach and hurricanes, are only a few of the elements we get to ‘enjoy’ by living here. After all, it’s a tropical paradise, as foreigners like to call it.

We are all looking to escape the heat, even for just a few minutes. But not everything is heat and rain, there are also many flavors to be enjoyed year round.  Sometimes all we have is sugar ladden treats that aren’t the healthiest choices.  There are many local frozen treats that are traditional for summer, like Limber. It’s similar to Italian Ice. I don’t know how it got its weird name or what it means, but that’s another post.

To take advantage of the flavors of my country, I made Coconut Milk Pops sweetened with natural honey. Both ingredients are produced locally, so I can feel good about this frozen treat. If you can’t find coconut milk and honey locally, there are many great options at the supermarket these days. Just make sure you but Coconut Milk, not Coconut Cream.

Description

A healthy coconut frozen treat without added sugar.


Ingredients

Scale
  • 15 ounces (443 ml) Coconut Milk
  • 3 tablespoons of Honey
  • 2 tablespoons of shredded Coconut (optional)

Instructions

  1. In a bowl, mix the coconut milk, honey and shredded coconut (if using).
  2. Pour into the popsicle molds. It will fill four, 4 ounce (118 ml) molds.

Notes

This recipe makes four pops. It’s easy to make more, just double the ingredients. The shredded coconut will sink to the bottom, but that’s a good thing, you get to eat them first.
