Super Light Cauliflower GratinI always try to figure out ways to create tasty dishes with a super light twist, and to come up with this one took a little time. I’ve been thinking about a light bechamelle for months and then one day, my microwave gave me this inspiration.

This bechamelle is absolutely butter free and you can use it as a regular white sauce without worrying too much about fats and calories.

Description

Fiber packed and low fats tasty side dish


Ingredients

Scale
  • 1 cauliflower
  • 300ml of low fat milk (you can use also soy milk or rice milk if you have special needs)
  • 2 tbsp of corn starch
  • salt and pepper
  • 1/2 tsp of grounded nutmeg
  • 100gr of cheese (you can choose mozzarella, or parmigiano, emmenthaler or any cheese that melts)

Instructions

  1. Wash, cut into pieces and cook the cauliflower (you can boil it or steam it). It will take about 10 minutes. You can also cook it in the microwave, lay each piece in a glass tray or into a microwave pan, add a couple of tablespoon of water and cover with a microwave plastic wrap. Cook for about 7 minutes (800W) and let it rest for a couple.
  2. Drain the cauliflower and put it into a terrine or a baking pan, add salt and pepper to taste, but remember not to add too much salt. Later you will add bechamelle sauce and cheese that will give extra saltiness to your dish.
  3. Dissolve the starch in a couple of spoon of milk into a microwave proof bowl. Add the rest of the milk and then salt, pepper and the nutmeg. Turn the microwave on at 800W for 60 sec. Open it and mix vigorously the sauce, it should be still a little liquid. Put into the microwave again for other 70 to 80sec. Now it should be ready. If it’s still too liquid you can try add some more starch, dissolved in a little water or milk and cook it for 60sec.
  4. Add a spoonful of grated cheese and mix all the ingredients gently. Cover with the rest of the cheese and broil for about 15 minutes. Serve tepid. You can also serve it for a brunch with some croutons or fresh bread.
